I don’t have any recipes for you, because cooking rarely happens during the semester for me. :(

But I wanted to point out this site that I came across! It’s pretty impressive, and I’m really surprised that warner brothers owns it, it amazes me that they would do that. (Well, except that they probably realize there’s a growing vegan market/area to make money.)

But I digress…here it is! Enjoy.

Wannabe Mango Lassi (Inspired mango smoothie.)

…That reminds me of Trix cereal.

Also, I apologize for another smoothie post. I just couldn’t help myself.

I was trying to make mango lassi because I went to an Indian Restaurant the other night and sadly it was mostly a non-vegan Indian place. They used ghee, cheese, and yogurt in a lot of their recipes. They did however make one of their okra entrees vegan for me, and it was pretty tasty.

Anyways, onto the drink! This probably does not have the taste of normal mango lassi, but it is inspired by it. Instead of yogurt I used avocado for a creamy, somewhat neutral base.

Mango Trix Lassi Smoothie Drink

Serves 1

1 Mango

1/2 Avocado

1 Cup or so Almond/non-dairy milk

1. Slice out your mango meat.

2. Slice our your ‘cado meat.

3. Blend it all up and enjoy.



Eats today.

1. Breakfast: banana and pb, coffee with anise molasses coconut milk ice cream.

3. Photo of the lovely produce we bought today! Kale, romaine, a fennel bulb, carrots (lots! lol), tomatoes, butternut squash, avocados, bananas, peaches, nectarines, grapefruit, and mangoes. Mostly organic. Needless to say, I am happy.

4. Salad (romaine) with sunflower seeds, tomato, roasted eggplant, red onions, and fennel. The best tempeh ever: http://www.food.com/recipe/italian-flavored-tempeh-nuggets-315262 Don’t worry, I didn’t eat all of this, haha. It was for 3 other people. :)

Its not long and really good. I’ve read quite a few stories like this and they always reinforce the fact that healthy eating and veganism is not unmanly. Meat does not equal masculinity. Well, human masculinity at least (dead animal muscles, obviously…).

Smoothies!

My mom brought home some carrot juice the other day so I got all inspired about smoothies. Now you may be thinking “What? Ew.” But it was inspirational to me because I make smoothies all the time so when I get a new idea for one its super fun! And also because of two words: carrot. cake.

Seereeuzz noms yallz. So Im gonna give you that recipe, but Im not a HUGE recipe person, if you haven’t caught on yet. I dislike measuring things. (Hence the “~“‘s flowing in abundance on this blog.) So Im gonna just give you some other ideas as well, some tips, and some other combos that I like lots.

Carrot Cake Smoothie (pictured)

1-2 C Carrot Juice

1 Frozen banana

1 TBSP nut butter (any kind!)

1/2 tsp cinnamon (or your preference..im a cinnamon fiend so i put LOTS)

1/16 tsp pumpkin pie spice

Other add ins that i havent tried, but would realllyy want to, since they’re carrot cake-y:

-raisins

-plain nondairy yogurt (perhaps to give it that cream cheesey tartness? (you can make your own SUPER easily with nondairy milk, lemon juice, sweetner, and cornstarch…it just wont have the probiotics here you go if your interested: http://havecakewilltravel.com/2009/05/26/homemade-sorta-soygurt/)

-walnuts (because thats the classic, though personally I like lots of other nuts better…just do what you like)

Other smoothie ideas/tips:

*The other day my friend was over and wanted a smoothie. She was also drinking some coffee. I suggested she throw the coffee into the simple banana-almond milk one that I had blended up for her already. She did and it was awesome!

Moral of the story, if you like/drink coffee, throw it in.

*I really DISLIKE putting ice in my smoothies. It waters it down and makes it…well…icy. Haha. So I suggest freezing your fruit. ESPECIALLY BANANAS. :) Frozen bananas give smoothies creamy, smooth, delicious, thick awesomeness.

*If you have enough fruit or sweetner in your smoothie, and you are feeling a bit brave, try putting in 1/2 an avocado also for a smootthhh creamy consistency.

Recipe still needs tweaking, as you can see the texture is not quite right! Never the less it was still quite tasty, especially with bananas and peanut butter. :)

Artichoke and Heirloom Tomato Polenta Pizza

Sorry for the bad photo! I tend to eat my dinner after sundown, so there’s no pretty light. But I just had to show you, it was sooo delicious!

This is what I did:

I used trader Joe’s premade polenta and mashed it up with some salt, pepper, rosemary, garlic powder, and olive oil. First I spread the mixture out fairly evenly on a pan (or baking sheet) with my hands. Then I took some of Trader Joe’s artichoke antipasto and spread that on top. Finally, I cut up a farmers market organic heirloom tomato, arranged that on top, then sprinkled some nutritional yeast on top (optional).

Sooo tasty, creamy, comforting, and delicious! I recommend you eat with a fork. :)

Also, I dont have the recipe for the antipasto, these are the ingredients. It seems pretty simple:

Artichokes, water, canola oil, parsley, garlic, extra virgin oilive oil, salt, distilled vinegar, spices.

Fire Stew!
Dont worry…its not spicy (unless of course you decided to add cayenne or somethin.)
This is a variation of my all time fav fall-back soup, found here:

I call it fire soup because of the colors: red, orange, and yellow. :) This recipe makes about 2-4 servings, depending on how much you eat. Its lasting me 3 meals.

Ingredients
 1 Small Onion, diced.
 1 Bay leaf
 2 Tablespoons Extra Virgin Olive Oil
 1 Carrot, sliced
 2 Medium-Smallish tomatoes, diced.
 1 Pattypan squash, cubed. (These are sooo cute, I love their shape!! But you can  sub any kind, especially for this soup where the shape doesn’t matter.)
 1 Can or so of White Cannellini Beans, smashed up a bit.
 1/2 Cup quinoa (I actually used a quinoa/millet mix.)
 1 teaspoon thyme
 1 teaspoon Braggs Liquid Aminos, or 1/4-1/2 teaspoon of salt.
 Pepper to taste
 Dash of 21 seasoning salute (optional)
 Water

Instructions
1. Add the diced onion, bay leaf, and oil to your pot.
2. When oinions have become clear or become golden, add carrots. Once carrots begin to do the same, add squash.
3. Once the squash is heated up, add your tomatoes.
4. Then add your beans and quinoa and spices. Fill up the pan with water until its all covered plus maybe about an inch or so of water.
5. Boil then simmer until all the grains are cooked up.
Enjoy! Quinoa is a complete protein and beans have tons of nutrients and protein as well! Souper healthy..haha
